Ai, brewed with Omachi rice grown by Hidehiko iwafuji in Akaiwa, Okayama and polished to 40%. Ai references Ukiyo-e artist Hiroshige Utagawa’s commonly used “Japan Blue” color as well as the indigo denim craftsmen from Okayama, where the rice for this sake has been grown.
