Kikujin, a name derived from Koji dust, the creator of sake, brewed with Hyogo grown Yamadanishiki from the town of Tojo. It is polished to 40% to illustrate the importance of Koji on Japanese culture. The color Kikujin was only allowed to be worn by high-ranking officials and royalty.
