History and Story
Founded in 1805 in Shiga Prefecture, Kitajima is a family-run sake brewery now in its 14th generation. It is known for blending traditional techniques with modern innovation. Its classic brand Miyosakae offers a smooth, refined taste, while the newer Kitajima line explores bolder, experimental styles. The brewery often uses the labor-intensive kimoto method, creating complex and rich flavors. Using local Ōmi rice and soft water from the Suzuka Mountains, its sake reflects the region’s terroir. Kitajima Brewery stands out for preserving heritage while adapting to contemporary sake trends.
