Shirasugi Shuzo
History and Story
A historic sake brewery founded in 1777 in Kyotango, in northern Kyoto Prefecture, Japan, now led by 11th-generation brewer Satoru Shirasugi.
The brewery is known for its unique philosophy of using locally grown table rice such as Koshihikari and Sasanishiki instead of traditional sake rice like Yamadanishiki. It also experiments with different types of koji mold and yeast to create sake with bright acidity and distinctive flavors. Although it has more than 240 years of history, Shirasugi Shuzo remains a small craft brewery focused on innovation while expressing the local character of the Tango region.
