This long-aged shochu is made from pure brown sugar, crafted in-house from organically grown sugarcane. Each vintage is made only from the sugar produced that year—this one from 2002. It offers the deep, mellow aroma of aged brown sugar and a rich, lingering finish unique to vintage shochu. Each year’s release captures a different nuance, shaped by the island’s climate and character.
