Building on the success of its inaugural release, the second expression in the Fauna series is a medium-peated Single Malt Japanese Whisky crafted at Ikawa Distillery. This release features animal-inspired motifs and delivers a distinctive profile by blending two peated malts (50ppm and 30ppm) with the distillery’s signature non-peated bourbon barrel malt.

The whisky offers a delicate balance of citrusy orange bitterness and gentle peat, enhanced by a natural sweetness reminiscent of sugar candy. The medium peat level allows the whisky’s umami and depth to shine without overpowering smokiness. The finish reveals layers of bittersweet chocolate, leaving a lingering, harmoniously complex experience. Perfect for those seeking a nuanced yet approachable peated whisky.

About the Dessin Series: Flora & Fauna

The environment surrounding Ikawa Distillery in the Southern Alps has maintained a harmonious ecosystem over time, supported by a variety of living creatures. In much the same way, whisky is crafted through the blending of various original spirits, carefully balancing aroma and flavor. This shared theme of "harmony" is the essence of the 12-year whisky we are aiming to create, and the Dessin Series expresses the journey toward that goal.

Each future release will represent an element of this harmony, with labels inspired by the diverse species of the Southern Alps ecosystem. The non-peated model, Flora (plant motif), and its counterpart, the peated model, Fauna (animal motif), will come together to gradually complete the vision we are striving for.
