History and Story
Kunchō Brewery creates sake with depth and complexity often absent in modern brewing, balancing sweetness, acidity, bitterness, and umami. This character comes from traditional craftsmanship and a long partnership with the historic Ojika Tōji Guild.
Using the labor-intensive yamahai method, Kunchō relies on natural fermentation with wild yeast, producing layered flavors and sake that improves with age. While honoring these time-tested techniques, the brewery also innovates through its Kunchō NEXT series, blending tradition with modern preferences.
The result is a refined, balanced sake designed to be enjoyed continuously, reflecting both heritage and evolving tastes.
